POACHED STEELHEAD ON GRILL
1 fillet of trout or salmon
1/2 green pepper
1/2 red pepper
1 small red onion
1/2 lemon
1/2 stick real butter
salt and pepper
Cut peppers and onion into strips, place 1/2 the vegetables on a sheet of aluminum foil and lay the fish on top. Put the remaining vegetables on top along with the seasoning, butter and lemon. Close and fold the foil so no steam escapes, place on grill for about 8 minutes.
STEELHEAD OR SALMON BOIL
2 lbs fish
3 tablespoons salt
1/2 lemon
1 stick of butter
Cut fish into chunks about the size of stew meat. Heat 5 quarts of water to a boil and add salt and lemon. Drop fish into pot and bring back to a boil. Cook 2 min longer, then drain fish well. Dip chunks into melted butter.
SALMON DIP
1 jar of canned fish
2 packages of cream cheese
1/2 red onion
garlic salt and cajun seasoning
2 heaping tablespoons of horseradish
Drain jar of salmon. Chop onion, soften cream cheese and mix everything together along with seasoning. Best as a spread on ritz crackers.
